Coffee French Toast
We’ve brewed up a perfect brunch recipe that everyone can enjoy. You can make this melt-in-your-mouth and coffee-infused French toast in minutes. Top it off with a coffee cream that will only leave you wanting more.

Cooking Time: 10 minutes
Ingredients:
1tbsp Costa Coffee Signature Blend Roast & Ground
8 slices thick white bread
2 eggs
125ml whole milk
50g light brown sugar
2tbsp butter
For the coffee cream:
150ml double cream
1tbsp icing sugar
½ tsp Costa Coffee Beans Signature Blend Roast & Ground
Cocoa powder, for dusting
Method:
1. Start by making the coffee cream. Combine the cream, coffee and icing sugar in a mixing bowl. Using an electric whisk, beat on a medium-high speed until it starts to thicken. Cover and refrigerate until serving.
2. Break the eggs into a large mixing bowl and whisk well.
3. Next, add in the milk, brown sugar and coffee. Mix until well combined.
4. Pour the egg mixture into a large shallow dish. Lay the bread slices in the dish and allow to soak up the liquid.
5. Meanwhile, heat a large frying pan on medium heat. Add half the butter and once hot, add 2 slices of bread.
6. Cook for 2 minutes either side, until golden and crispy. Remove from the pan and keep warm until serving.
7. Repeat by melting the remaining butter and fry the rest of the bread slices.
8. To serve, stack the 2 French toast slices on each plate, top with a dollop of cold coffee cream and dust with cocoa powder. Brunch is served!
