Chocolate and Walnut Hot Cross Buns
With Easter just around the corner, why not try and create at home, the UK’s seasonal favourite Hot Cross Bun with a twist?

Makes 12
Prep Time: 30 Minutes (+2-3 hours proving time)
Cook Time: 20 Minutes
Ingredients:
3 tbsp. Costa Coffee Premium Instant
225ml Milk
7g Fast Action Dried Yeast
500g Strong White Flour
75g Caster Sugar
1 ½ tsp. Mixed Spiced
1 tsp. Ground Cinnamon
1 Egg
150g Mixed Dried Fruit
½ tsp. Salt
70g Chopped Walnuts
50g Dark Chocolate Chips
Toppings:
50g Plain Flour
50ml Cold Water
2 tbsp. Golden Syrup
Method:
Add 50ml of boiling water to the coffee.
Warm the Milk then add the yeast.
Place the Flour, Caster Sugar, Mixed Spice, Ground Cinnamon and Egg into a mixing bowl and begin to mix.
Add the Coffee then gradually add the Milk (you may not need it all) into the bowl and mix until you have a soft dough.
Use a wooden spoon to mix the ingredients then knead the dough on a floured work surface for 10 minutes.
When the dough is ready knead in the dried fruit, chopped walnuts and chocolate chips.
Place the dough into an oiled bowl then cover and leave to prove for 1-2 hours until doubled in size.
When ready knock the air out of the dough by kneading then then divide into 12 equal pieces and arrange on a lined or greased tray.
Cover with oiled clingfilm then leave to rise for another 45 minutes.
Preheat the oven to 220C/200C Fan/GM 7.
Mix the plain flour and water until smooth then pipe or spoon this mixture into a cross on top of each bun.
Bake for 20 minutes until risen and golden then brush over with the warm golden syrup.
