Maple Syrup and Pecan Cinnamon Rolls

Prep Time: 40 minutes (plus 2 hours proving time)
Cook Time: 25-30 minutes
Plus: 1 greased metal tin (around 23cm)
Ingredients:
Dough:
70ml Coffee (made using the Costa Coffee Nespresso® Amazonian Pods)
350g Strong White Bread Flour
2 tbsp. Caster Sugar
½ tsp. Ground Cinnamon
½ tsp. Salt
80ml Warm Milk
7g Fast Action Yeast
1 Large Egg
75g Melted Butter
Filling:
125g Unsalted Butter (softened)
75g Pecans
60g Soft Brown Sugar
2 tbsp. Maple Syrup
3 tsps. Ground Cinnamon
1 tbsp. Plain Flour
Topping:
2-3 tbsp. Costa Coffee (made using the Costa Coffee Nespresso® Amazonian Pods)
150g Icing Sugar
1 tbsp. Maple Syrup
8 Pecans
Method:
Place one of the Costa Coffee pods into the Nespresso® machine and use the ‘lungo’ setting make the 120ml of coffee needed for the recipe and leave to cool.
Next place the flour, sugar, ground cinnamon and salt into a large mixing bowl.
Warm the milk and add the yeast then leave until the yeast is beginning to bubble (around 5 minutes).
Add the coffee, egg and melted butter into the bowl of flour then gradually add the milk and yeast whilst mixing until you have a moist rough dough (you may not need all of the milk).
Next knead the dough on a floured surface for 10 minutes until the dough is smooth and elastic.
Then cover and leave to prove for about an hour and half until the dough has doubled in size.
Finely chop the pecans then place into a mixing along with all the ingredients for the filling.
Mix until you have a smooth paste and cover until needed.
When the dough has doubled in size roll out on a floured work surface to about 25cm x 35cm.
Spread the filling over the dough then roll and slice into 8 equal pieces.
Place them into the greased tin and cover with oiled clingfilm then leave to prove for another 45 minutes.
Preheat the oven to 200C/180C Fan/GM 6.
Bake for 25-30 minutes until risen and golden.
When the cinnamon buns come out of the oven make the icing by mixing the coffee with the maple syrup and icing sugar until smooth.
Spread the warm cinnamon buns with the icing and top each with a pecan then serve.
